Charity worker Aimee Dalrymple embarked on a rice and beans fast to help address poverty and injustice in poorer nations.

The 23-year-old, from Renfrew, was raising money in aid of Tearfund, a Christian organisation promoting poverty awareness and supporting nations in need, while helping provide food and support for those living in crisis.

Aimee’s inspiration for the project was hearing about the “shocking” level of poverty on her doorstep, after it was revealed 4,500 people in the area rely on foodbanks.

The challenge consisted of five days of eating porridge for breakfast, rice and beans for lunch and more rice and beans for dinner.

“We have raised £1,309 and counting! It’s gone amazingly well,” Aimee said.

“My aunt Gil Young, sister Megan and mum Christine have been a tremendous support.

“I have been a Christian since the age of 15 and have always wanted to do something for charity so Tearfund, because it’s a Christian organisation, was a bit of a no-brainer.” Aimee, a former support worker, is now in Bolivia in a bid help communities set up lives for themselves.

She will be educating them about health and faith over 10 weeks, following her tough rice and beans challenge.

“It will definitely be a big learning experience,” Aimee continued.

“To hear people on my doorstep are literally starving without foodbanks is shocking.

“The entire journey is doubt going to be a huge reflection process.”
